Moving away from traditional methods reliant on visual cues and appearance, the roasting process is now liberated from self-judgment. Confidence in roasting levels is assured with precise measurements of coffee beans and grounds. Alongside the SCA-standard Agtron value, roasting levels are identified by their respective names.

Utilizing the Agtron value endorsed by the Specialty Coffee Association (SCA), the roasting degree of coffee is measured with unparalleled accuracy using near-infrared technology. This enables adherence to SCA Cupping Standards, facilitating cupping according to protocol.

A Digital Coffee Roast Degree Measuring Device
The "Dipper" digitally assesses and displays the roasting degree of coffee beans and grounds. By placing coffee beans or grounds into the Dipper and pressing a button, the roasting level is promptly measured and digitally displayed (Agtron value). In addition to numerical values, familiar roast degree names like "City" and "French Roast" are provided, enabling easy measurement for professionals and enthusiasts alike, including cafes, schools, shops, manufacturers, and baristas.

Compared to traditional methods, the Dipper assesses roasting states from whole beans to ground coffee, facilitating comparison between different roast levels. By incorporating two measurement modes—one for whole beans and one for ground—roasters can easily gauge roasting consistency.

Dipper Measures Agtron Values with Near-Infrared Light
Unlike conventional methods relying on visual color assessment, the Dipper utilizes near-infrared technology to accurately measure roasting levels based on the Maillard reaction, caramelization, and carbonization of coffee. This palm-sized device, suitable for both commercial and home use, offers precise measurements without the need for bulky equipment.

Introduced at SCAJ2023, one of Asia's largest coffee festivals, the Dipper impressed industry professionals accustomed to traditional measuring equipment. Its compact design, ability to measure roasting levels within seconds, and display of Agtron values were particularly noteworthy.

Operating on the same principles as the U.S. Agtron system, the Dipper employs near-infrared rays with wavelengths ranging from 780 to 1500 nm, closely mimicking visible light. As coffee roasts deepen, the degree of carbonization increases, resulting in increased absorption and reflection of infrared rays.
